Description

A comforting and hearty casserole filled with tender chicken, crispy hashbrowns, savory bacon, and melted cheddar cheese. Topped with a buttery Ritz cracker crust, this dish is perfect for family meals or gatherings.


Ingredients

  • 3 cups frozen hash browns, thawed slightly (about 8 ounces)

  • 23 cups cooked chicken, diced

  • ¼ cup bacon bits

  • 1 cup shredded cheddar cheese

  • 1 10.5-ounce can condensed cream of chicken soup

  • ½ cup milk

  • 12 ounces frozen mixed vegetables, thawed slightly

  • ⅛ teaspoon dried thyme

For the Topping:

  • 1214 Ritz crackers (about half a sleeve), crushed

  • ½ cup shredded cheddar cheese


Instructions

  • Preheat your oven to 350°F (175°C).

  • In a large mixing bowl, combine the thawed hash browns, cooked chicken, bacon bits, shredded cheddar cheese, cream of chicken soup, milk, mixed vegetables, and dried thyme. Stir well to combine.

  • Transfer the mixture into a greased 9×13-inch casserole dish and spread it out evenly.

  • In a small bowl, combine the crushed Ritz crackers and shredded cheddar cheese for the topping. Sprinkle the mixture evenly over the casserole.

  • Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.

 

  • Remove from the oven and let it cool slightly before serving.

Notes

  • If you want to add extra flavor, you can season with salt, pepper, or garlic powder to taste.

  • Feel free to substitute the mixed vegetables with your favorite vegetables, such as peas, corn, or carrots.
