Ingredients

3 cups frozen hash browns, thawed slightly (about 8 ounces)

1 10.5-ounce can condensed cream of chicken soup

12 ounces frozen mixed vegetables, thawed slightly

⅛ teaspoon dried thyme
For the Topping:

12–14 Ritz crackers (about half a sleeve), crushed

½ cup shredded cheddar cheese
Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the thawed hash browns, cooked chicken, bacon bits, shredded cheddar cheese, cream of chicken soup, milk, mixed vegetables, and dried thyme. Stir well to combine.

Transfer the mixture into a greased 9×13-inch casserole dish and spread it out evenly.

In a small bowl, combine the crushed Ritz crackers and shredded cheddar cheese for the topping. Sprinkle the mixture evenly over the casserole.

Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.
