- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons butter
- 4 tablespoons olive oil
- 1 cup sliced mushrooms
- 1/2 cup Marsala wine
- 1/4 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions
- Season chicken breasts with salt and pepper.
- Dredge chicken in flour and shake off excess.
- In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil.
- Cook chicken in the butter and oil mixture over medium heat until browned on both sides.
- Remove chicken and set aside.
- In the same skillet, add the remaining butter and olive oil.
- Add mushrooms and sauté until browned.
- Pour Marsala wine and chicken broth into the skillet.
- Return chicken to skillet and simmer until chicken is cooked through.
- Garnish with parsley before serving.
Notes
- For a thicker sauce, let it simmer a bit longer to reduce the liquid.
- You can substitute chicken broth with vegetable broth if preferred.
- Serve with mashed potatoes or pasta to soak up the delicious sauce.
