Description

This Chicken Sautéed with Chorizo combines tender, juicy chicken breasts with smoky, spicy chorizo, savory vegetables, and a rich tomato-based sauce. It’s a flavorful, one-pan meal that’s perfect for a quick weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 lb chorizo, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 can diced tomatoes
  • 1/2 cup chicken broth
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Season chicken breasts with salt, pepper, and paprika.
  • In a large skillet, cook chorizo until browned. Remove and set aside.
  • In the same skillet, add chicken breasts and cook until browned on both sides. Remove and set aside.
  • Add onion, garlic, and bell pepper to the skillet. Cook until vegetables are softened.
  • Stir in diced tomatoes and chicken broth. Add chorizo back to the skillet.
  • Return chicken breasts to the skillet. Cover and simmer until chicken is cooked through.
  • Serve hot, garnished with fresh parsley.

Notes

This dish can be served over rice or with crusty bread to soak up the flavorful sauce. You can adjust the spice level by adding more or less paprika or a pinch of cayenne pepper.
