Description

This Chicken Stew is a warm, rich, and deeply comforting one-pot meal featuring tender chicken pieces, hearty vegetables, and a flavorful broth. Perfect for any day when you want a satisfying, home-cooked dish that brings cozy vibes in every spoonful. Easy to prepare and full of wholesome ingredients, it’s ideal for family meals or leftovers that taste even better the next day.

Ingredients

Scale

Protein

  • 1.5 to 2 pounds chicken thighs or breasts (thighs preferred for juiciness)

Vegetables

  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 34 garlic cloves, minced
  • 3 medium potatoes, peeled and diced

Liquids & Flavorings

  • 4 cups chicken broth (gluten-free if needed)
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil or butter

Herbs & Seasonings

  • 23 sprigs fresh thyme
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare Your Ingredients: Wash and chop all vegetables into bite-sized pieces. Trim the chicken and pat it dry to ensure better searing and flavor development during cooking.
  2. Sauté the Aromatics: Heat olive oil or butter in a large pot over medium heat. Add diced onion, celery, and carrots. Cook until the onions are translucent and vegetables have softened slightly. Stir in minced garlic and cook for another minute until fragrant.
  3. Brown the Chicken: Add chicken pieces to the pot and brown lightly on all sides. This step locks in flavor and helps keep the meat tender and juicy as it simmers.
  4. Add Broth, Potatoes, and Seasonings: Pour in chicken broth, add tomato paste, diced potatoes, fresh thyme sprigs, and bay leaves. Stir everything together and bring the mixture to a boil.
  5. Simmer Until Perfect: Reduce heat to low and allow the stew to simmer gently for 30 to 40 minutes, or until the chicken and potatoes are tender. Stir occasionally to prevent sticking and to allow flavors to meld wonderfully.
  6. Final Seasoning and Serve: Remove thyme sprigs and bay leaves. Taste and adjust seasoning with salt and pepper as needed. Serve the stew piping hot for a comforting meal.

Notes

  • Use bone-in chicken for extra richness in the broth and tender meat.
  • Don’t skip browning the chicken to add depth and caramelized flavors.
  • Simmer the stew gently on low heat to keep chicken juicy and enhance flavor development.
  • Season the chicken during cooking and again before serving for balanced taste.
  • Add fresh herbs such as parsley or thyme just before serving to brighten the aroma.
