- 1 boneless, skinless chicken breast
- 1/2 avocado, sliced
- 1/4 cup shredded cheddar cheese
- 1 chipotle pepper in adobo sauce, chopped
- 2 slices of bread
- 1 tablespoon butter
Instructions
- Cook the chicken breast in a skillet over medium heat until fully cooked.
- Remove the chicken from the skillet and shred it with two forks.
- Butter one side of each slice of bread.
- On the non-buttered side of one slice of bread, layer the shredded chicken, sliced avocado, chopped chipotle pepper, and shredded cheddar cheese.
- Top with the other slice of bread, buttered side out.
- Place the sandwich in the skillet over medium heat and cook until the bread is toasted and the cheese is melted.
- Serve hot and enjoy!
Notes
For an extra kick, you can add more chipotle peppers or drizzle some adobo sauce on the sandwich. Feel free to swap the cheddar cheese with your favorite meltable cheese.
