Description

Deliciously creamy Chocolate Chip Cheesecake Bars featuring a buttery graham cracker crust, a smooth velvety cheesecake layer dotted with melty chocolate chips, creating the perfect sweet treat that’s easy to make, family-friendly, and irresistible for any occasion.

Ingredients

Scale

For the Crust

  • 1 1/2 cups graham cracker crumbs or digestive biscuits
  • 6 tablespoons melted butter
  • 2 tablespoons sugar

For the Cheesecake Filling

  • 16 oz (450g) cream cheese, softened to room temperature
  • 3/4 cup sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1 cup chocolate chips (milk, dark, or mini as preferred)

Instructions

  1. Prepare the crust: Preheat your oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly and evenly into the bottom of a lined 9×9-inch baking pan to form the crust.
  2. Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add sugar, then beat in the eggs one at a time, followed by vanilla extract and flour. Mix until fully combined and smooth, being careful not to overmix.
  3. Add the chocolate chips: Gently fold the chocolate chips into the cheesecake batter to distribute them evenly, ensuring chocolate in every bite.
  4. Assemble and bake: Pour the cheesecake filling over the prepared crust and spread it evenly. Bake in the preheated oven for 35-40 minutes or until the edges are set and slightly golden while the center still jiggles slightly when gently shaken.
  5. Cool and chill: Remove from oven and allow the bars to cool completely at room temperature. Refrigerate for at least 4 hours or overnight to develop the best texture and flavor before slicing and serving.

Notes

  • Use cream cheese and eggs at room temperature for a smooth batter.
  • Avoid overmixing to prevent cracks and dense texture.
  • Use a springform or lined pan for easy removal and slicing.
  • Check doneness carefully; the center should still jiggle slightly to avoid dryness.
  • Chill thoroughly in the refrigerator for optimal texture and flavor.
