  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1.5 quarts vanilla ice cream

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix well.
  • Fold in the semisweet chocolate chips.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Allow cookies to cool completely on a wire rack.
  • Once the cookies are cooled, scoop a generous amount of vanilla ice cream onto one cookie and gently press a second cookie on top to form a sandwich.
  • Serve immediately or wrap each sandwich in plastic wrap and freeze until ready to eat.
