- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1 teaspoon baking soda

- 2 cups semisweet chocolate chips
- 1.5 quarts vanilla ice cream
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix well.
- Fold in the semisweet chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Allow cookies to cool completely on a wire rack.
- Once the cookies are cooled, scoop a generous amount of vanilla ice cream onto one cookie and gently press a second cookie on top to form a sandwich.
- Serve immediately or wrap each sandwich in plastic wrap and freeze until ready to eat.
