Description

Chocolate Coconut Date Balls are a healthy, no-bake snack blending the natural caramel sweetness of Medjool dates with rich cocoa, shredded coconut, and crunchy nuts. These easy-to-make energy bites provide a perfect balance of flavors and textures, ideal for a quick pick-me-up or a guilt-free dessert.

Ingredients

Scale

Base Ingredients

  • 1 cup Medjool dates, pitted (soaked in warm water for 10 minutes if dry, then drained)
  • 1/2 cup unsweetened shredded coconut (reserve some for rolling)
  • 2 tablespoons cocoa powder
  • 1/2 cup almonds or walnuts, finely chopped or ground
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Prep Your Dates: Start by pitting your Medjool dates if they aren’t already pitted. If your dates are a little dry, soak them in warm water for 10 minutes to soften, then drain well to make blending easier and the texture smoother.
  2. Combine Ingredients: In a food processor, add the softened dates, cocoa powder, shredded coconut (reserving some for rolling), chopped nuts, vanilla extract, and a pinch of sea salt. Pulse until the mixture starts to come together but still has a slightly chunky texture.
  3. Form the Balls: Using your hands, roll the mixture into small, bite-sized balls. If the mixture feels too sticky, wet your hands slightly or chill the dough in the fridge for 10 minutes before rolling.
  4. Coat the Balls: Roll each ball in the reserved shredded coconut or any other coating of your choice for extra flavor and a delightful finish.
  5. Chill Before Serving: Place the Chocolate Coconut Date Balls on a baking sheet or plate and chill them in the fridge for at least 30 minutes to firm up and enhance the flavor.

Notes

  • Choose soft Medjool dates for best texture and natural sweetness.
  • Pulse ingredients in the food processor instead of overblending to keep some texture in the balls.
  • If dates are not sweet enough, add a splash of maple syrup or honey to taste.
  • Slightly wet your hands before rolling to prevent sticking.
  • Store finished balls in an airtight container in the refrigerator for up to two weeks.
