- 1 1/2 cups crushed chocolate cookies
- 1/4 cup melted butter
- 2 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup melted semi-sweet chocolate
- 1/2 cup strawberry jam
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, combine the crushed chocolate cookies and melted butter. Press the mixture into the bottom of the springform pan to form the crust.
- In another bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract and melted semi-sweet chocolate until well combined.
- Pour the cream cheese mixture over the prepared cookie crust.
- Bake for 45-50 minutes, or until the center is almost set.
- Spread the strawberry jam evenly over the top of the cheesecake.
- Chill for at least 4 hours before serving. Garnish with fresh strawberries just before serving.
Notes
For an extra chocolatey flavor, you can drizzle melted chocolate over the top before serving.
