These Christmas Cookie Bars are a festive and easy-to-make treat, combining all the traditional flavors of Christmas cookies into one delicious bar. Packed with chocolate chips, sprinkles, and a buttery base, they are perfect for holiday gatherings and bring extra cheer to your celebrations!

For the Cookie Base:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups chocolate chips (milk or semi-sweet)
- 1/2 cup red and green sprinkles
For the Frosting (Optional):
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1–2 tbsp milk (to reach desired consistency)
- Extra sprinkles for topping
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it. - Make the Cookie Dough:
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy (about 2-3 minutes). Beat in the eggs one at a time, then add the vanilla extract and mix until combined. - Add Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. - Fold in the Chocolate Chips & Sprinkles:
Stir in the chocolate chips and 1/2 cup of red and green sprinkles (save a few sprinkles for the top). - Bake the Cookie Bars:
Spread the dough evenly in the prepared baking dish. Bake for 25-30 minutes, or until the bars are golden brown on top and a toothpick comes out clean from the center. Let the bars cool completely in the pan on a wire rack. - Frosting (Optional):
If you want to add frosting, beat together the softened butter, powdered sugar, vanilla extract, and milk until smooth. Spread the frosting over the cooled bars and top with extra sprinkles. - Slice and Serve:
Once the bars are frosted and set, slice them into squares or rectangles. Serve and enjoy the festive, sweet treat!

- For extra flavor, add a handful of chopped nuts like walnuts or pecans to the dough for added texture.
- If you’re not using frosting, top the bars with extra sprinkles, mini candy canes, or even crushed-up peppermint candies for a festive twist.
