Description

These Christmas Cookie Bars are a festive and easy-to-make treat, combining all the traditional flavors of Christmas cookies into one delicious bar. Packed with chocolate chips, sprinkles, and a buttery base, they are perfect for holiday gatherings and bring extra cheer to your celebrations!

For the Cookie Base:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups chocolate chips (milk or semi-sweet)
  • 1/2 cup red and green sprinkles

For the Frosting (Optional):

  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (to reach desired consistency)
  • Extra sprinkles for topping

Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
  • Make the Cookie Dough:
    In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy (about 2-3 minutes). Beat in the eggs one at a time, then add the vanilla extract and mix until combined.
  • Add Dry Ingredients:
    In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the Chocolate Chips & Sprinkles:
    Stir in the chocolate chips and 1/2 cup of red and green sprinkles (save a few sprinkles for the top).
  • Bake the Cookie Bars:
    Spread the dough evenly in the prepared baking dish. Bake for 25-30 minutes, or until the bars are golden brown on top and a toothpick comes out clean from the center. Let the bars cool completely in the pan on a wire rack.
  • Frosting (Optional):
    If you want to add frosting, beat together the softened butter, powdered sugar, vanilla extract, and milk until smooth. Spread the frosting over the cooled bars and top with extra sprinkles.
  • Slice and Serve:
    Once the bars are frosted and set, slice them into squares or rectangles. Serve and enjoy the festive, sweet treat!
