Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Red and green food coloring

Instructions

  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Beat in egg and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, mixing until dough forms.
  • Divide dough in half and tint one half with red food coloring and the other half with green food coloring.
  • Roll out each colored dough into a rectangle.
  • Place one rectangle on top of the other and roll up tightly to form a log.
  • Wrap in plastic wrap and refrigerate for at least 1 hour.
  • Preheat oven to 350°F (175°C).
  • Slice dough into 1/4 inch rounds and place on baking sheets.
  • Bake for 10-12 minutes or until edges are lightly golden.
  • Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

  • For a more vibrant color, add more food coloring as needed.
  • Make sure the dough is chilled properly before slicing to avoid spreading while baking.
