Description

This gourmet Cinnamon Sugar Brie and Apple Grilled Cheese brings together buttery toasted bread, creamy Brie, crisp apples, and a sweet-spicy hot honey butter. Apple Brie Grilled Cheese

  • 8 slices hearty white country loaf or French bread (sourdough or rye also work)

  • 2 organic apples, thinly sliced

  • 250 g Brie cheese (about 1 cup), sliced into 12–16 thin pieces

  • 3 tablespoons butter (for spreading on bread)

  • 4 tablespoons hot honey butter (see below)

Hot Honey Butter

  • 2 tablespoons salted butter, at room temperature

  • 2 tablespoons fireweed honey or other mild honey

  • ¼ teaspoon hot chili flakes (adjust up to ½ teaspoon for more heat)


Instructions

  • Make the hot honey butter: In a small bowl, mix the room-temperature salted butter with honey and chili flakes until well combined. Set aside.

  • Assemble the sandwiches: Lay out 4 slices of bread. Spread hot honey butter on the inside of each slice. Layer with Brie slices and thinly sliced apples. Top with the remaining 4 slices of bread.

  • Butter the bread: Spread regular butter on the outsides of the sandwiches.

  • Grill the sandwiches: Heat a skillet or griddle over medium heat. Grill sandwiches 3–4 minutes per side, pressing gently, until the bread is golden brown and the Brie is melted.

  • Serve immediately, optionally with a drizzle of extra honey.

Notes

  • Use tart apples like Granny Smith or sweet ones like Honeycrisp, depending on your flavor preference.

  • Remove rind from Brie if you prefer a smoother texture, but it is edible and adds flavor.

  • Omit chili flakes from honey butter for a no-heat version.
