Ingredients
For the Pretzels:
-
4 ¾ cups all-purpose flour
-
1 tablespoon kosher salt
-
2 tablespoons light brown sugar
-
2 ¼ teaspoons active dry yeast
-
½ cup lukewarm water
-
2 tablespoons unsalted butter, room temperature
-
1 cup whole milk, lukewarm
-
1 egg yolk (for egg wash)
-
2 tablespoons baking soda (for boiling water bath)
For the Cinnamon Sugar:
-
1 cup granulated sugar
-
3 tablespoons ground cinnamon
-
6 tablespoons unsalted butter, melted
For the Cream Cheese Dip:
-
½ cup cream cheese, room temperature
-
2 tablespoons unsalted butter, room temperature
-
1 cup confectioners’ sugar
-
1 tablespoon heavy cream
-
½ teaspoon vanilla extract
Instructions
-
In a small bowl, combine lukewarm water and yeast. Let sit for 5 minutes until foamy.
-
In a large mixing bowl, combine flour, salt, and brown sugar. Add in the yeast mixture, lukewarm milk, and butter. Knead until a smooth dough forms, about 7–10 minutes.
-
Cover and let the dough rise in a warm place until doubled in size, about 1 hour.
-
Preheat oven to 450°F (230°C). Line two baking sheets with parchment paper.
-
Divide the dough into 12 equal pieces. Roll each piece into a long rope and shape into pretzels.
-
Bring a large pot of water to a boil and carefully add baking soda. Boil each pretzel for 20–30 seconds, then remove and place on baking sheets.
-
Brush each pretzel with egg yolk wash.
-
Bake for 12–15 minutes or until golden brown.
-
While warm, brush pretzels with melted butter and toss in the cinnamon sugar mixture until well coated.
-
For the dip: Beat cream cheese and butter until smooth. Add confectioners’ sugar, heavy cream, and vanilla, and mix until fluffy.
- Serve warm pretzels with the dip.
Notes
-
You can freeze the shaped pretzels before boiling and baking. Just thaw and continue from step 6.
- Try adding a touch of nutmeg or cardamom for extra depth in flavor.
