For the Pretzels:

  • 4 ¾ cups all-purpose flour

  • 1 tablespoon kosher salt

  • 2 tablespoons light brown sugar

  • 2 ¼ teaspoons active dry yeast

  • ½ cup lukewarm water

  • 2 tablespoons unsalted butter, room temperature

  • 1 cup whole milk, lukewarm

  • 1 egg yolk (for egg wash)

  • 2 tablespoons baking soda (for boiling water bath)

For the Cinnamon Sugar:

  • 1 cup granulated sugar

  • 3 tablespoons ground cinnamon

  • 6 tablespoons unsalted butter, melted

For the Cream Cheese Dip:

  • ½ cup cream cheese, room temperature

  • 2 tablespoons unsalted butter, room temperature

  • 1 cup confectioners’ sugar

  • 1 tablespoon heavy cream

  • ½ teaspoon vanilla extract


Instructions

  • In a small bowl, combine lukewarm water and yeast. Let sit for 5 minutes until foamy.

  • In a large mixing bowl, combine flour, salt, and brown sugar. Add in the yeast mixture, lukewarm milk, and butter. Knead until a smooth dough forms, about 7–10 minutes.

  • Cover and let the dough rise in a warm place until doubled in size, about 1 hour.

  • Preheat oven to 450°F (230°C). Line two baking sheets with parchment paper.

  • Divide the dough into 12 equal pieces. Roll each piece into a long rope and shape into pretzels.

  • Bring a large pot of water to a boil and carefully add baking soda. Boil each pretzel for 20–30 seconds, then remove and place on baking sheets.

  • Brush each pretzel with egg yolk wash.

  • Bake for 12–15 minutes or until golden brown.

  • While warm, brush pretzels with melted butter and toss in the cinnamon sugar mixture until well coated.

  • For the dip: Beat cream cheese and butter until smooth. Add confectioners’ sugar, heavy cream, and vanilla, and mix until fluffy.

  • Serve warm pretzels with the dip.

Notes

  • You can freeze the shaped pretzels before boiling and baking. Just thaw and continue from step 6.
