This delightful twist on the classic cassata features a rich cheesecake layer nestled between moist yellow cake. Topped with chocolate chips and candied fruit, it’s a festive treat for any occasion.

- 1 box yellow cake mix
- 24 oz ricotta cheese
- 8 oz cream cheese (softened)
- 1/2 cup sugar
- 2 eggs
- 1/2 cup mini chocolate chips
- 1/4 cup candied fruit
Instructions
- Preheat the oven to 350°F (175°C). Prepare the yellow cake mix according to package instructions and bake in two round cake pans.
- In a mixing bowl, beat together the ricotta cheese, cream cheese, and sugar until smooth. Add the eggs, mixing well, then fold in the mini chocolate chips and candied fruit.
- Pour the cheesecake mixture into a springform pan and bake for 40 minutes at 325°F (160°C) until set.
- Once the cakes and cheesecake are completely cooled, layer the cheesecake between the two yellow cakes. Chill in the refrigerator before serving.
Notes
For added decoration, consider topping the cake with whipped cream or additional mini chocolate chips before serving.
