- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon sugar
- 1 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup green bell pepper, finely chopped
- 1/2 cup sweet pickles, chopped
- Salt and pepper to taste

Instructions
- Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, and sugar. Mix until smooth.
- Add the cooled macaroni, celery, red onion, green bell pepper, and sweet pickles to the bowl. Gently fold everything together until well coated.
- Season with salt and pepper to taste. Adjust the dressing ingredients if desired.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, give the salad a good stir and garnish with fresh parsley, if desired.
