Description

This delightful Cloud Bread is light, fluffy, and gluten-free! Perfect for sandwiches, as a snack, or simply enjoyed on its own, this unique bread is made with eggs and cream cheese for a deliciously airy texture.


Ingredients

  • Main Ingredients:
    • 3 large eggs
    • 1/4 cup cream cheese, softened
    • 1/4 cup Greek yogurt
    • 1/4 cup granulated sugar
    • 1/2 teaspoon vanilla extract
    • Pinch of salt
  • For Stability:
    • 1/4 teaspoon cream of tartar

Instructions

  • Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Separate Eggs: In a large bowl, separate the egg whites from the yolks. Place the egg whites in a clean, dry bowl.
  • Beat Egg Whites: Add the cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.
  • Prepare Egg Yolk Mixture: In a separate bowl, whisk together the egg yolks, cream cheese, Greek yogurt, sugar, vanilla extract, and a pinch of salt until smooth and well combined.
  • Combine Mixtures: Gently fold the egg yolk mixture into the beaten egg whites, being careful not to deflate the egg whites. Mix until just combined.
  • Shape the Bread: Spoon the batter onto the prepared baking sheet, forming 4-6 mounds. You can shape them as thick or thin as you prefer.
  • Bake: Bake for 25-30 minutes, or until the cloud bread is golden brown and set in the center.
  • Cool and Serve: Let the cloud bread cool before serving. Enjoy it fresh, or store it in an airtight container for later use.
