Ingredients

  • 1 cup shredded coconut
  • 2 cups milk
  • 3/4 cup white sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350°F (175°C).
  • In a medium saucepan, combine milk, sugar, flour, butter, eggs, vanilla extract, and salt.
  • Cook over low heat, stirring constantly, until the mixture thickens.
  • Stir in shredded coconut.
  • Pour filling into pie crust.
