Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tablespoon instant espresso powder
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream

Instructions

  • Preheat the oven to 325°F (160°C).
  • Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  • In a large bowl, beat the cream cheese and sugar together until smooth.
  • Dissolve the espresso powder in 1 tablespoon of hot water and add it to the cream cheese mixture along with vanilla extract.
  • Add the eggs one at a time, beating until just combined.
  • Stir in sour cream and mix well.
  • Pour the batter over the crust and bake for 50-55 minutes until the center is set.
  • Let the cheesecake cool completely and refrigerate for at least 4 hours before serving.

Notes

For best flavor, use high-quality espresso powder.
