- 2 cups milk
- 1/2 cup warm water
- 4 tsp active dry yeast
- 5 tbsp granulated sugar, divided
- 3 tbsp melted unsalted butter
- 1/4 cup honey
- 7.5 cups all-purpose flour (or up to 1/2 cup, divided)
- 2 eggs
- 2 tsp salt
- 2 tbsp melted unsalted butter (for brushing on top)
Instructions
- Scald the Milk: Heat the milk in a saucepan over medium heat until small bubbles form around the edges. Remove from heat and cool for about 10 minutes.
- Activate the Yeast: In a bowl, mix warm water, yeast, and 1 tablespoon of sugar. Let sit for 5-10 minutes until foamy.
- Combine Ingredients: In a stand mixer, combine the yeast mixture, remaining sugar, honey, and warm milk (not hot). Add 2 cups of flour and beat for a couple of minutes.
- Add Butter and Eggs: Mix in melted butter, eggs, and salt, stirring well.
- Add Flour: Gradually add the remaining flour, one cup at a time, until the dough separates from the bowl. Add flour by the tablespoon if needed.
- Rest the Dough: Allow the dough to rest for a few minutes.
- Knead the Dough: Knead the dough in the mixer with a dough hook or by hand for about 5 minutes until smooth. Add flour as necessary.
- First Rise: Grease a large bowl, place the dough inside, and cover loosely with plastic wrap. Let rise in a warm spot for about 45 minutes, or until doubled in size.
- Shape the Rolls: Punch down the dough and roll it out on a floured surface to about 1/2 to 3/4 inch thick. Cut into 2-inch squares.
- Second Rise: Place the dough squares on lined baking sheets, cover loosely with plastic wrap, and let rise until doubled, about 1 hour.
- Preheat Oven: Preheat the oven to 350°F (175°C) in the last few minutes of rising.
- Bake the Rolls: Bake for 14-18 minutes until the tops are lightly golden brown, rotating pans if baking both at once.
