- 1 cup cottage cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped parsley
- 1 egg, beaten for brushing
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 package empanada dough
Instructions
- Preheat the oven to 400F (200C).
- In a bowl, mix cottage cheese, mozzarella, parsley, garlic powder, and black pepper until combined.
- Roll out the empanada dough and cut it into circles.
- Place 1 tablespoon of the cheese mixture in the center of each dough circle, fold in half, and seal the edges with a fork.
- Brush the tops of the empanadas with the beaten egg.
- Bake for 15-18 minutes or until golden brown and crispy.
