Description

These Cottage Cheese Empanadas are a delightful blend of creamy cottage cheese and mozzarella, seasoned with garlic and parsley. Baked to golden perfection, they’re perfect for appetizers or snacks.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped parsley
  • 1 egg, beaten for brushing
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 package empanada dough

Instructions

  • Preheat the oven to 400F (200C).
  • In a bowl, mix cottage cheese, mozzarella, parsley, garlic powder, and black pepper until combined.
  • Roll out the empanada dough and cut it into circles.
  • Place 1 tablespoon of the cheese mixture in the center of each dough circle, fold in half, and seal the edges with a fork.
  • Brush the tops of the empanadas with the beaten egg.
  • Bake for 15-18 minutes or until golden brown and crispy.

Notes

Serve with a dipping sauce like salsa or sour cream for added flavor.
