For the Casserole:
- 2 (6 oz) packages cornbread mix
- 1 lb ground beef
- 1 can (10 oz) Rotel tomatoes (undrained)
- 1 can (15 oz) whole kernel corn (drained)
- 1 can (15 oz) ranch-style beans (undrained)
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese (plus more for topping, if desired)
- Optional toppings: Sour cream, salsa, or additional toppings
Instructions
- Prepare the Cornbread Mix:
- Follow the package instructions to prepare the cornbread batter. Set aside.
- Preheat the Oven:
- Preheat your oven to 425°F (220°C). Grease a 9×13-inch casserole dish.
- Cook the Ground Beef:
- In a large skillet over medium-high heat, brown the ground beef. Drain any excess fat.
- Add Seasonings and Vegetables:
- Add the taco seasoning, Rotel tomatoes (with their juice), undrained ranch-style beans, and drained corn to the skillet. Stir everything together and let it simmer for about 5 minutes to meld the flavors.
- Combine and Assemble:
- Stir the shredded cheese into the ground beef mixture, then combine the beef mixture with the prepared cornbread batter. Mix well.
- Bake the Casserole:
- Pour the entire mixture into the greased casserole dish and spread it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Garnish and Serve:
- If desired, top with more shredded cheese, sour cream, salsa, or any other favorite toppings. Let it cool slightly before serving.
