For the Casserole:

  • 2 (6 oz) packages cornbread mix
  • 1 lb ground beef
  • 1 can (10 oz) Rotel tomatoes (undrained)
  • 1 can (15 oz) whole kernel corn (drained)
  • 1 can (15 oz) ranch-style beans (undrained)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese (plus more for topping, if desired)
  • Optional toppings: Sour cream, salsa, or additional toppings

Instructions

  • Prepare the Cornbread Mix:
    • Follow the package instructions to prepare the cornbread batter. Set aside.
  • Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Grease a 9×13-inch casserole dish.
  • Cook the Ground Beef:
    • In a large skillet over medium-high heat, brown the ground beef. Drain any excess fat.
  • Add Seasonings and Vegetables:
    • Add the taco seasoning, Rotel tomatoes (with their juice), undrained ranch-style beans, and drained corn to the skillet. Stir everything together and let it simmer for about 5 minutes to meld the flavors.
  • Combine and Assemble:
    • Stir the shredded cheese into the ground beef mixture, then combine the beef mixture with the prepared cornbread batter. Mix well.
  • Bake the Casserole:
    • Pour the entire mixture into the greased casserole dish and spread it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Garnish and Serve:
    • If desired, top with more shredded cheese, sour cream, salsa, or any other favorite toppings. Let it cool slightly before serving.
