Description

Cowboy Spaghetti is a hearty, flavorful dish with a zesty beef and vegetable sauce, spiced up with chili powder, cumin, and green chilies. Topped with melted cheddar cheese, this recipe is perfect for a family meal that’s both filling and full of bold southwestern flavors.

Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 oz spaghetti
  • Shredded cheddar cheese, for topping

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Add the onion, bell pepper, and garlic, and cook until vegetables are tender.
  • Stir in the diced tomatoes, tomato sauce, green chilies, chili powder, cumin, salt, and pepper. Simmer for 15 minutes.
  • Meanwhile, cook the spaghetti according to package instructions.
  • Serve the spaghetti topped with the meat sauce and shredded cheddar cheese.

Notes

  • You can add more heat by using a spicier chili powder or adding jalapeños.
  • For a lower-carb version, substitute the spaghetti with zucchini noodles or other veggie noodles.
  • This recipe can be easily doubled for larger servings or meal prep.
