Description

Crispy and flavorful, these Crab Cake Egg Rolls combine tender crabmeat with classic seasonings, all wrapped in a golden, crunchy shell. Perfect as an appetizer or a main dish!


Ingredients

  • 1 lb crabmeat
  • 1 cup crushed Ritz crackers
  • 1/2 cup mayonnaise
  • 1 large egg
  • 1 tsp Old Bay seasoning
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 6 egg roll wrappers
  • 1/4 cup water (for sealing the egg rolls)

Instructions

  • Prepare the Crab Cake Mixture:
    • In a bowl, whisk together the egg, mayonnaise, Old Bay seasoning, Worcestershire sauce, lemon juice, and fresh parsley.
    • Fold in the crushed Ritz crackers and crabmeat until well combined.
    • Refrigerate the mixture for 15 minutes to set before rolling the egg rolls.
  • Assemble the Egg Rolls:
    • Lay out the egg roll wrappers diagonally on a clean surface.
    • Brush the edges of the wrappers with water to help seal.
    • Spoon approximately 3 ounces of the crab cake mixture onto the center of each wrapper.
    • Fold the point closest to you over the mixture, then fold in the sides and roll up tightly.
  • Cook the Egg Rolls:
    • Preheat your air fryer to 375°F (190°C).
    • Lightly spray the egg rolls with cooking oil.
    • Place in the air fryer basket, leaving space between them.
    • Cook for 10-12 minutes, flipping halfway through until golden brown.
  • Serve and Enjoy:

Notes

For extra flavor, consider adding diced scallions or a dash of hot sauce to the mixture.
