These Crab Stuffed Cheddar Bay Biscuits are a delightful twist on classic biscuits, filled with succulent crab meat and topped with a zesty lemon butter. Perfect for a comforting appetizer or side dish.

For the Biscuits:

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup cold butter, cubed
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup buttermilk
  • 1 cup cooked crab meat, chopped

For the Lemon Butter:

  • 1/4 cup unsalted butter, melted
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  • Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare Biscuit Dough: In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and onion powder. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Add Cheese: Stir in the shredded cheddar cheese.
  • Mix Wet Ingredients: Pour in the buttermilk and mix until just combined. The dough will be slightly sticky.
  • Stuff Biscuits: Turn the dough out onto a lightly floured surface. Roll it out to about 1/2-inch thickness. Use a biscuit cutter to cut out circles. Place a small spoonful of crab meat in the center of half of the dough circles. Top with another dough circle and pinch the edges to seal.
  • Bake: Place the stuffed biscuits onto the prepared baking sheet. Bake for 12-15 minutes, or until golden brown.
  • Prepare Lemon Butter: While the biscuits are baking, mix together melted butter, lemon juice, lemon zest, garlic powder, and parsley (if using) in a small bowl.
  • Brush with Lemon Butter: Remove the biscuits from the oven and immediately brush the tops with the lemon butter mixture.
  • Serve: Enjoy the biscuits warm, either as an appetizer or a side dish.

Notes

For extra flavor, add a pinch of Old Bay seasoning to the crab meat mixture.
