Ingredients
Scale
- 1 cup white chocolate chips
- 1/4 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1/4 cup dried cranberries (chopped)
- 1/4 cup pistachios (chopped)
- 1/4 cup powdered sugar (for rolling)
Instructions
- Make the White Chocolate Ganache:
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (not boil).
- Remove from heat and pour the hot cream over the white chocolate chips in a heatproof bowl. Stir until the chocolate is completely melted and smooth.
- Add the vanilla extract and mix well. Let the ganache cool to room temperature, then place it in the refrigerator for 1-2 hours to firm up.
- Prepare the Cranberry and Pistachio Coating:
- While the ganache is chilling, chop the dried cranberries and pistachios into small pieces. Set aside.
- Form the Truffles:
- Once the ganache has firmed up, use a spoon or melon baller to scoop out small portions of the ganache and roll them into balls using your hands. Aim for about 1-inch balls.
- Roll each truffle in the chopped cranberries and pistachios, pressing gently to ensure they adhere.
- Roll in Powdered Sugar:
- After rolling the truffles in the cranberry and pistachio mixture, roll them in the powdered sugar for a final coating. This will add sweetness and a nice finish to the truffles.
- Chill and Serve:
- Place the truffles on a baking sheet lined with parchment paper and refrigerate for an additional 30 minutes to set.
- Once set, they are ready to serve or store in an airtight container in the refrigerator.
Notes
- These truffles can be made ahead of time and stored in the fridge for up to a week.
- For an extra flavor boost, you can add a pinch of sea salt to the pistachios or drizzle the truffles with melted chocolate.
