  • 1/4 cup powdered sugar (for rolling)

Instructions

  • Make the White Chocolate Ganache:
    • In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (not boil).
    • Remove from heat and pour the hot cream over the white chocolate chips in a heatproof bowl. Stir until the chocolate is completely melted and smooth.
    • Add the vanilla extract and mix well. Let the ganache cool to room temperature, then place it in the refrigerator for 1-2 hours to firm up.
  • Prepare the Cranberry and Pistachio Coating:
    • While the ganache is chilling, chop the dried cranberries and pistachios into small pieces. Set aside.
  • Form the Truffles:
    • Once the ganache has firmed up, use a spoon or melon baller to scoop out small portions of the ganache and roll them into balls using your hands. Aim for about 1-inch balls.
    • Roll each truffle in the chopped cranberries and pistachios, pressing gently to ensure they adhere.
  • Roll in Powdered Sugar:
    • After rolling the truffles in the cranberry and pistachio mixture, roll them in the powdered sugar for a final coating. This will add sweetness and a nice finish to the truffles.
  • Chill and Serve:
    • Place the truffles on a baking sheet lined with parchment paper and refrigerate for an additional 30 minutes to set.
    • Once set, they are ready to serve or store in an airtight container in the refrigerator.
