Ingredients

  • 1 cup mashed ripe bananas (about 3 medium bananas)
  • 1/2 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  • In a medium bowl, cream together cream cheese, butter, and sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract and mashed bananas.
  • In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add dry ingredients to the banana mixture, stirring until just combined.
  • Pour batter into the prepared loaf pan and smooth the top.
  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
