A rich and flavorful side dish, this creamed spinach with crispy bacon and tender mushrooms is a perfect addition to any meal.

For the Dish:
- 4 slices bacon, chopped
- 2 tablespoons butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 10 oz fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- A pinch of nutmeg (optional)
Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
- In the same skillet, add butter and sauté the onion and garlic until softened, about 3 minutes.
- Add the mushrooms to the skillet and cook for 4-5 minutes until browned and tender.
- Stir in the fresh spinach, allowing it to wilt, about 2-3 minutes.
- Pour in the heavy cream, then add the Parmesan cheese. Stir well and let the mixture simmer for 2-3 minutes until thickened.
- Season with salt, pepper, and a pinch of nutmeg, if desired.
- Return the crispy bacon to the skillet, mix, and serve warm.
