Description

This Creamy Alfredo Lasagna Soup combines all the comforting flavors of lasagna with a creamy, flavorful broth. Ground beef, tender lasagna noodles, and Parmesan cheese come together in a rich, creamy tomato-based soup that’s perfect for cozy dinners.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 8 lasagna noodles, broken into pieces
  • Salt and pepper to taste
  • Fresh basil, chopped (for garnish)

Instructions

  • In a large pot, brown the ground beef over medium heat. Add the onion and garlic, and cook until the onion is translucent.
  • Stir in the diced tomatoes, tomato sauce, chicken broth, heavy cream, Parmesan cheese, and Italian seasoning. Bring to a simmer.
  • Add the broken lasagna noodles to the pot and cook until they are tender, about 10-12 minutes.
  • Season with salt and pepper to taste.
  • Serve the soup hot, garnished with fresh basil.

Notes

  • For extra creaminess, you can add more heavy cream or a bit of cream cheese to the soup.
  • You can use ground turkey or chicken for a leaner option.
