- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 8 lasagna noodles, broken into pieces
- Salt and pepper to taste
- Fresh basil, chopped (for garnish)
Instructions
- In a large pot, brown the ground beef over medium heat. Add the onion and garlic, and cook until the onion is translucent.
- Stir in the diced tomatoes, tomato sauce, chicken broth, heavy cream, Parmesan cheese, and Italian seasoning. Bring to a simmer.
- Add the broken lasagna noodles to the pot and cook until they are tender, about 10-12 minutes.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with fresh basil.

- For extra creaminess, you can add more heavy cream or a bit of cream cheese to the soup.
- You can use ground turkey or chicken for a leaner option.
