  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 3 1/2 cups 2% milk
  • 8 ounces medium cheddar cheese, shredded
  • 8 ounces extra sharp cheddar cheese, shredded

Instructions

  • Preheat the oven to 350°F (175°C).
  • Cook the macaroni according to the package instructions, then drain and set aside.
  • In a large saucepan, melt the butter over medium heat. Add the flour, white pepper, salt, and cayenne pepper. Stir constantly to form a roux and cook for about 2 minutes.
  • Gradually add the milk, stirring constantly to avoid lumps. Cook until the sauce thickens, about 5-7 minutes.
  • Reduce heat to low, then stir in the shredded cheddar cheeses until melted and smooth.
  • Add the cooked macaroni to the sauce, stirring until well combined.
  • Pour the mac and cheese mixture into a greased baking dish.
  • Bake uncovered for 20-25 minutes, or until the top is golden and bubbly.
  • Remove from the oven and let sit for a few minutes before serving.
