8 oz penne pasta

1 lb large shrimp, peeled and deveined

1 Tbsp olive oil

2 Tbsp Cajun seasoning, divided (adjust based on brand and spice preference)

2 Tbsp unsalted butter

2 garlic cloves, minced

1/2 cup diced tomatoes

1 1/2 cups heavy whipping cream

1/2 cup grated Parmesan cheese, plus more for serving

2 Tbsp fresh parsley, chopped (optional, for garnish)
Instructions

Cook the penne pasta according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add shrimp and sprinkle with 1 tablespoon of Cajun seasoning. Cook until shrimp are pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.

In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add diced tomatoes and cook for 2 minutes, allowing them to soften.

Pour in the heavy whipping cream and bring to a simmer. Cook for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.

Stir in Parmesan cheese and the remaining tablespoon of Cajun seasoning. Continue to cook for 2 minutes until the cheese is melted and the sauce is smooth.
