Description

Creamy, comforting, and packed with flavor, this Chicken and Spinach Pasta is the perfect weeknight dinner. Tender chicken, fresh spinach, and a velvety garlic cream sauce come together with perfectly cooked pasta for a meal that’s sure to impress.


Ingredients

  • 8 ounces uncooked pasta

  • 2 chicken breasts, cut into small bite-size pieces

  • Salt & pepper, to taste

  • Flour, for dredging

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 4 cloves garlic, minced

  • 1/3 cup chicken broth

  • 1 teaspoon lemon juice

  • 1/2 teaspoon Dijon mustard

  • 1/4 teaspoon Italian seasoning

  • 1 cup heavy/whipping cream

  • 5 ounces fresh baby spinach

  • 1/2 cup freshly grated parmesan cheese


Instructions

  • Cook pasta according to package instructions. Drain and set aside.

  • Season chicken pieces with salt and pepper, then lightly dredge in flour.

  • In a large skillet over medium heat, melt butter with olive oil. Add chicken and cook until browned and cooked through. Remove from skillet and set aside.

  • In the same skillet, add minced garlic and cook for 30 seconds.

  • Stir in chicken broth, lemon juice, Dijon mustard, and Italian seasoning. Simmer for 2–3 minutes.

  • Add heavy cream and bring to a gentle simmer.

  • Stir in spinach and cook until wilted.

  • Add parmesan cheese and stir until melted and the sauce is smooth.

  • Return chicken and pasta to the skillet. Toss everything together until well coated in the sauce.

  • Serve warm.

Notes

  • Penne, fusilli, or fettuccine work well with this recipe.

  • Add red pepper flakes for a spicy kick.

  • For a lighter option, use half-and-half instead of heavy cream.
