Ingredients

8 ounces uncooked pasta

2 chicken breasts, cut into small bite-size pieces

Salt & pepper, to taste

Flour, for dredging

1 tablespoon butter

1 tablespoon olive oil

4 cloves garlic, minced

1/3 cup chicken broth

1 teaspoon lemon juice

1/2 teaspoon Dijon mustard

1/4 teaspoon Italian seasoning

1 cup heavy/whipping cream

5 ounces fresh baby spinach

1/2 cup freshly grated parmesan cheese
Instructions

Cook pasta according to package instructions. Drain and set aside.

Season chicken pieces with salt and pepper, then lightly dredge in flour.

In a large skillet over medium heat, melt butter with olive oil. Add chicken and cook until browned and cooked through. Remove from skillet and set aside.

In the same skillet, add minced garlic and cook for 30 seconds.

Stir in chicken broth, lemon juice, Dijon mustard, and Italian seasoning. Simmer for 2–3 minutes.

Add heavy cream and bring to a gentle simmer.

Stir in spinach and cook until wilted.

Add parmesan cheese and stir until melted and the sauce is smooth.

Return chicken and pasta to the skillet. Toss everything together until well coated in the sauce.
