Description

Indulge in a comforting and creamy lasagna made in one skillet! This dish combines tender chicken, fresh spinach, and a rich sauce, all layered with gooey cheese. Perfect for a cozy dinner!


Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts
  • 2 1/2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 10 lasagna noodles, broken into pieces
  • 1 1/2 cups mozzarella cheese, grated
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 cups baby spinach leaves
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  • Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper on both sides. Cook until one side is browned, about 3-5 minutes.
  • Simmer Chicken in Broth: Turn the chicken over and add chicken broth to the skillet. Bring to a simmer, cover, and cook for 10-15 minutes until cooked through and no longer pink.
  • Shred the Chicken: Remove the chicken from the skillet and shred into bite-sized pieces using two forks. Set aside.
  • Prepare the Sauce and Noodles: To the same skillet, add heavy cream, dried basil, and garlic powder. Stir to combine. Add broken lasagna noodles, ensuring they are submerged in the sauce. Bring to a simmer, cover, and cook for about 15 minutes, stirring occasionally, until noodles are tender.
  • Add Chicken, Cheese, and Spinach: Stir in half of the mozzarella, half of the Parmesan, the shredded chicken, and spinach. Season to taste with salt and pepper. Stir until spinach wilts and everything is well combined.
  • Finish and Serve: Sprinkle remaining mozzarella over the top. Cover and let rest off the heat for about 5 minutes, allowing the cheese to melt.
  • Serve: Serve hot, garnished with additional Parmesan or fresh herbs if desired.
