- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 cup beef or vegetable broth
- 1 cup heavy cream
- 1 cup grated Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the gnocchi according to package instructions, then drain and set aside.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the onions and cook until caramelized, about 20 minutes.
- Add the garlic and thyme to the skillet and cook for another 2 minutes.
- Pour in the broth and heavy cream, and bring to a simmer.
- Stir in the cooked gnocchi, Gruyère, and Parmesan cheese. Season with salt and pepper.
- Transfer the skillet to the oven and bake for 20-25 minutes, until the cheese is melted and bubbly.
