Ingredients

  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 cup beef or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cook the gnocchi according to package instructions, then drain and set aside.
  • In a large oven-safe skillet, heat the olive oil over medium heat. Add the onions and cook until caramelized, about 20 minutes.
  • Add the garlic and thyme to the skillet and cook for another 2 minutes.
  • Pour in the broth and heavy cream, and bring to a simmer.
