Instructions

  2. Sear the Chops: Heat butter and olive oil together in a skillet over medium-high heat. Once hot, add the pork chops and sear for 3-4 minutes per side until they develop a golden-brown crust. Remove chops from the pan and set aside to rest while you make the sauce.
  3. Sauté Aromatics: Reduce the heat to medium and add the finely chopped garlic and shallots to the same skillet. Cook for about 2 minutes until fragrant and translucent, scraping up any browned bits stuck to the pan for extra flavor.
  4. Build the Creamy Herb Sauce: Pour in the chicken broth to deglaze the pan, scraping the bottom thoroughly. Add the heavy cream along with the chopped thyme, rosemary, and parsley. Stir and let the sauce simmer gently, stirring regularly, until it thickens slightly.
  5. Combine and Finish Cooking: Return the rested pork chops to the pan, spooning the sauce over them. Cover and cook for another 5-7 minutes, or until the internal temperature reaches 145°F (63°C). If using Parmesan cheese, sprinkle it in now and allow it to melt into the sauce before serving.
