Description

  • For the Chicken:

    • 4 boneless, skinless chicken breasts

    • 1 teaspoon garlic powder

    • 1 teaspoon onion powder

    • 1 teaspoon smoked paprika

    • Salt and black pepper, to taste

    • 2 tablespoons olive oil

  • For the Rice:

    • 1 cup long-grain white rice

    • 2 cups chicken broth

    • 1/2 teaspoon salt

  • For the Creamy Sauce:

    • 2 tablespoons unsalted butter

    • 2 tablespoons all-purpose flour

    • 1 1/2 cups whole milk

    • 1/2 cup chicken broth

    • 1/2 teaspoon garlic powder

    • 1/4 teaspoon thyme

    • 1/2 cup shredded cheddar cheese

    • 1/2 cup grated Parmesan cheese

    • Fresh parsley, chopped (for garnish)


Instructions

  • Cook the Rice:
    In a medium saucepan, bring the chicken broth and salt to a boil. Add the rice, cover, and reduce the heat to low. Let it simmer for about 15-20 minutes until the rice is tender and the liquid has been absorbed. Remove from heat and set aside.

  • Prepare the Chicken:
    Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
    Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

  • Make the Creamy Sauce:
    In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute to make a roux.
    Gradually whisk in the milk and chicken broth, continuing to stir until the mixture thickens, about 3-4 minutes.
    Add garlic powder, thyme, cheddar cheese, and Parmesan cheese, stirring until the cheese melts and the sauce is smooth. Season with salt and pepper to taste.

 

  • Assemble the Dish:
    Place the cooked rice on serving plates. Top with the chicken breasts, then pour the creamy sauce over the chicken and rice.
    Garnish with fresh parsley before serving.

Notes

  • You can use low-fat milk if you prefer a lighter version of the creamy sauce.

  • For a bit of extra flavor, try adding sautéed mushrooms or spinach to the creamy sauce.
