Creamy Spinach & Mushroom Gnocchi is a rich and flavorful dish that’s perfect for a quick weeknight dinner. With tender gnocchi, sautéed mushrooms, and a creamy garlic sauce, this meal is both comforting and delicious.


Ingredients

  • 1 lb (450g) gnocchi
  • 2 tablespoons olive oil
  • 2 cups baby spinach, washed
  • 1 cup mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the gnocchi according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until golden brown.
  • Add the minced garlic and sauté for another minute until fragrant.
  • Stir in the baby spinach and cook until wilted.
  • Pour in the heavy cream and smoked paprika, stirring to combine.
  • Add the cooked gnocchi to the skillet and toss to coat in the sauce.
  • Stir in the grated Parmesan cheese until the sauce is creamy and the gnocchi is well coated.
  • Season with salt and pepper to taste.
  • Garnish with chopped parsley before serving.
