- 4 large eggs
- 1/2 cup milk
- 1/2 tsp vanilla extract

- 2 tbsp butter, for cooking
- 8 oz (225g) cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup fresh strawberries, chopped
- 1/2 cup fresh strawberries, sliced
- Whipped cream
- Maple syrup or powdered sugar for serving
Instructions
- Make the cheesecake filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the chopped strawberries. Set aside.
- Prepare the French toast: In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon.
- Assemble the stuffed French toast: Spread the cheesecake filling evenly onto 4 slices of bread. Top with the remaining slices of bread to create a sandwich.
- Cook the French toast: Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter. Dip each sandwich into the egg mixture, making sure to coat both sides evenly. Place the sandwiches on the hot skillet and cook for 2-3 minutes per side, or until golden brown. Repeat with the remaining sandwiches, adding more butter as needed.
