- 1 pound chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups fresh spinach
- Grated Parmesan cheese, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chicken and cook until browned on all sides.
- Add the onion and garlic, and sauté until softened.
- Stir in the sun-dried tomatoes, chicken broth, heavy cream, basil, salt, and pepper.
- Simmer for 15-20 minutes, or until the chicken is cooked through.
- Stir in the spinach and cook until wilted.
- Serve hot, garnished with grated Parmesan cheese.
