For the Chicken:
- 4 chicken thighs or drumsticks, skin-on
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
For the Gravy:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and dried thyme.
- Dip each piece of chicken into the beaten eggs, then coat evenly with the flour mixture, pressing the flour onto the chicken. Finally, coat with panko breadcrumbs.
- Arrange the coated chicken pieces on the prepared baking sheet. Bake for 35-40 minutes, or until the chicken is crispy and reaches an internal temperature of 165°F (74°C).
- For the gravy, melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1-2 minutes, until golden.
- Gradually whisk in the chicken broth and milk, and continue to cook, stirring constantly, until the gravy thickens (about 5 minutes). Season with salt, black pepper, and dried thyme.
- Serve the crispy baked chicken with a generous drizzle of the creamy gravy.
Notes
For extra crispiness, let the chicken sit for a few minutes after baking before serving. You can also add some freshly chopped parsley for garnish!
