Description

These crispy baked ground beef tacos are loaded with savory ground beef, melted cheese, and a touch of red enchilada sauce, all baked to golden perfection. A quick and easy taco recipe with a crispy tortilla shell that’s sure to be a hit at any meal!


Ingredients

  • 1 pound lean ground beef (90%)

  • 1 packet taco seasoning

  • ¾ cup red enchilada sauce

  • 2 ½ cups Oaxaca cheese (or Mexican cheese or Monterey Jack)

  • 10 corn tortillas

  • 1 tablespoon olive oil


Instructions

  • Preheat your oven to 450°F (230°C).

  • Heat a skillet over medium-high heat and brown the ground beef, breaking it up as it cooks.

  • Stir in the taco seasoning and red enchilada sauce. Bring to a simmer, then remove from heat.

  • Wrap the tortillas in a damp paper towel and microwave for 30–60 seconds until they’re pliable.

  • Brush one side of each tortilla with olive oil.

  • Place the tortilla on a baking sheet, oiled side down.

  • Add 2 tablespoons of cheese to half of the tortilla, top with ¼ cup of the beef mixture, and then add 2 more tablespoons of cheese.

  • Fold the tortilla over the filling and place on the baking sheet. Repeat with the remaining tortillas and arrange them in a single layer.

  • Bake for 16 minutes or until the tortillas are crispy and the cheese is melted.

 

  • Let the tacos cool for 3 minutes before serving.

Notes

  • To avoid cracking, make sure your tortillas are warm before folding. If they crack or won’t stay folded, secure them with a toothpick.

  • Bake directly on a nonstick or ceramic sheet pan to avoid sticking.

  • For a twist, you can substitute the red enchilada sauce with green enchilada sauce for a tangy flavor.
