Description

Golden and crispy on the outside, fluffy on the inside, these Baked Parmesan Garlic Fries are the perfect side dish or snack. Coated in savory garlic butter and tossed with fresh parsley and sharp Parmesan, they’re a healthier take on your favorite fries—no deep fryer needed.

Ingredients

Scale
  • 2 lbs. russet potatoes

  • 2 Tbsp. olive oil or avocado oil

  • 1 ½ tsp. salt, divided (to taste)

  • ½ tsp. black pepper

  • 2 Tbsp. butter (or additional oil)

  • 2 cloves garlic, finely minced

  • ¾ cup Parmesan cheese, finely grated

  • ¼ cup fresh parsley, finely chopped

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  • Wash and peel potatoes if desired, then cut into thin fries (about ¼-inch thick).

  • Soak fries in cold water for 30 minutes to remove excess starch. Drain and pat completely dry.

  • Toss potatoes in a large bowl with olive oil, 1 tsp salt, and black pepper until evenly coated.

  • Spread fries in a single layer on the baking sheet, making sure they’re not crowded.

  • Bake for 30–35 minutes, flipping halfway, until golden brown and crispy.

  • Meanwhile, in a small pan over medium heat, melt butter and sauté garlic for 1–2 minutes until fragrant.

  • Remove fries from oven and immediately toss with garlic butter, remaining ½ tsp salt, Parmesan, and chopped parsley.

  • Serve hot and enjoy.

Notes

  • For extra crispiness, don’t skip the soaking step.

  • Use freshly grated Parmesan for best flavor and texture.

  • You can use garlic powder instead of fresh garlic for convenience.

  • Adjust salt based on the saltiness of your Parmesan cheese.
