A twist on classic French toast, this crispy version is made with ripe bananas for natural sweetness and extra flavor. The perfect breakfast or brunch dish, it’s both simple and indulgent.


Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 4 slices of bread
  • Butter for cooking

Instructions

  • In a shallow bowl, mash the ripe bananas until smooth.
  • Add eggs, milk, vanilla extract, and cinnamon to the mashed bananas and whisk until the mixture is well combined.
  • Heat a skillet over medium heat and melt butter to coat the pan.
  • Dip each slice of bread into the banana mixture, making sure both sides are coated evenly.
  • Place the coated bread slices onto the skillet and cook for about 2-3 minutes per side or until golden brown and crispy.
  • Serve hot with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.

Notes

1. Banana Ripeness

  • The riper the banana, the sweeter and smoother the mixture will be. Overripe bananas work best in this recipe since they mash easily and add natural sweetness to the French toast.

2. Bread Choice

  • Thicker bread like brioche, challah, or Texas toast works best for French toast, as it holds up better when soaking in the banana mixture.
  • You can also use whole wheat or gluten-free bread if desired.
