Ingredients

Scale

Main Ingredients

  • 1 cup sweet corn kernels (fresh, canned, or frozen)
  • 1 cup grated mozzarella or cheddar cheese
  • 2 tablespoons all-purpose flour (or gluten-free flour for gluten-free option)
  • 1 cup breadcrumbs (use gluten-free breadcrumbs if needed)
  • 2 large eggs (or flax eggs for vegan option)
  • 1/4 cup finely chopped onions or scallions
  • Salt, to taste
  • Black pepper, to taste
  • Oil with a high smoke point, for frying

Instructions

  1. Prepare the Corn and Cheese Mixture: Drain any excess water from corn if using canned or frozen. In a large bowl, combine corn kernels, grated cheese, finely chopped onions or scallions, salt, and pepper. Mix thoroughly to ensure even distribution of flavors.
  2. Add Binders and Mix Well: Crack the eggs into the bowl and sprinkle the flour over the mixture. Stir gently but thoroughly until the mixture sticks together. If too wet, add more flour gradually until manageable but still moist enough to shape.
  3. Shape Into Patties: Take portions of the mixture, roll into small balls, then flatten gently into patties about half an inch thick. Keep them uniform in size for even cooking and consistent texture.
  4. Coat the Patties: Spread breadcrumbs on a plate. Dip each patty carefully into the breadcrumbs, coating evenly on all sides without pressing too hard to maintain a light crust.
  5. Fry Until Golden Brown: Heat oil in a frying pan over medium heat until hot but not smoking. Fry patties in batches, avoiding overcrowding. Cook for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels to remove excess oil.

Notes

  • Use fresh corn for better sweetness and texture.
  • Do not overmix batter to avoid tough patties.
  • Maintain medium oil temperature for even frying without burning.
  • Form patties uniformly for consistent cooking.
  • Drain patties on paper towels to keep them crispy.
  • For baking option, preheat oven to 400°F (200°C), bake patties 15–20 minutes, flipping halfway.
