  • 2 medium zucchinis
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

  • 2 eggs

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Cut the zucchinis into thin strips, resembling fries.
  • In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper.
  • In another dish, beat the eggs.
  • Dip each zucchini strip into the beaten eggs, then coat them in the breadcrumb mixture.
