- 6 slices bacon, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 lbs potatoes, peeled and diced
- 1 tsp dried thyme
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/4 cup chopped chives
Instructions
- In a skillet, cook the bacon until crispy. Remove bacon and set aside.
- In the same skillet, cook the onion and garlic until softened.
- Transfer the onion, garlic, and bacon to the crock pot. Add chicken broth, potatoes, thyme, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
- Use an immersion blender to blend the soup until smooth.
- Stir in heavy cream and cheddar cheese until melted.
- Serve hot, topped with chopped chives.
Notes
- If you prefer a chunkier soup, blend only part of the soup and leave some potato pieces intact.
- For extra flavor, add extra cheese on top before serving.
