Description

A creamy and comforting soup made with crispy bacon, hearty potatoes, and rich cheese. This crockpot recipe is perfect for a cozy meal on a chilly day.


Ingredients

  • 6 slices bacon, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 lbs potatoes, peeled and diced
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped chives

Instructions

  • In a skillet, cook the bacon until crispy. Remove bacon and set aside.
  • In the same skillet, cook the onion and garlic until softened.
  • Transfer the onion, garlic, and bacon to the crock pot. Add chicken broth, potatoes, thyme, oregano, salt, and pepper.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in heavy cream and cheddar cheese until melted.
  • Serve hot, topped with chopped chives.

Notes

  • If you prefer a chunkier soup, blend only part of the soup and leave some potato pieces intact.
  • For extra flavor, add extra cheese on top before serving.
