- 2 lbs boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/2 cup bourbon
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1/4 tsp red pepper flakes
- 2 tbsp cornstarch
- 2 tbsp water
- Green onions, chopped (for garnish)
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, mix together soy sauce, brown sugar, bourbon, ketchup, garlic, ginger, and red pepper flakes. Pour this sauce mixture over the chicken thighs.
- Cover and cook on low for 7-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- In a small bowl, mix cornstarch and water to create a slurry. Stir this into the crockpot during the last 30 minutes of cooking to thicken the sauce.
- Once done, serve the bourbon chicken over rice and garnish with chopped green onions.
Notes
- If you prefer a spicier dish, you can increase the red pepper flakes.
- For a deeper flavor, let the chicken cook on low for the full 7-8 hours.
- This dish pairs wonderfully with steamed white or jasmine rice.
