Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 cup bourbon
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/4 tsp red pepper flakes
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Green onions, chopped (for garnish)

Instructions

  • Place chicken thighs in the crockpot.
  • In a bowl, mix together soy sauce, brown sugar, bourbon, ketchup, garlic, ginger, and red pepper flakes. Pour this sauce mixture over the chicken thighs.
  • Cover and cook on low for 7-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  • In a small bowl, mix cornstarch and water to create a slurry. Stir this into the crockpot during the last 30 minutes of cooking to thicken the sauce.
  • Once done, serve the bourbon chicken over rice and garnish with chopped green onions.

Notes

  • If you prefer a spicier dish, you can increase the red pepper flakes.
  • For a deeper flavor, let the chicken cook on low for the full 7-8 hours.
  • This dish pairs wonderfully with steamed white or jasmine rice.
