Chicken:

  • 3 boneless skinless chicken breasts

  • 1 small white onion, diced

  • 3 cloves garlic, minced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 6 cups chicken broth

  • 2 cups milk

  • 2 to 3 tablespoons cornstarch

Dumplings:

  • 2 cups all-purpose flour

  • 1 teaspoon salt

  • 1/4 teaspoon baking powder

  • 3/4 cup milk or buttermilk

  • 2 tablespoons melted butter


Instructions

  • Place the chicken breasts, onion, garlic, salt, and pepper into the crockpot.

  • Pour the chicken broth and milk over the ingredients. Cover and cook on low for 6-7 hours or until the chicken is fully cooked and tender.

  • Remove the chicken breasts from the crockpot, shred the chicken using two forks, and return it to the crockpot.

  • In a separate bowl, whisk together the cornstarch and a little bit of water to make a slurry, then stir it into the crockpot. This will help thicken the broth.

  • To make the dumplings: In a medium bowl, combine the flour, salt, and baking powder. Stir in the milk (or buttermilk) and melted butter to form a dough.

  • Drop spoonfuls of the dumpling dough into the crockpot. Cover and cook on high for 30-40 minutes or until the dumplings are cooked through and fluffy.

 

  • Taste and adjust seasonings as needed before serving.

Notes

  • You can substitute buttermilk for milk in the dumpling mixture for a slightly tangy flavor.

  • If you prefer a thicker soup, increase the amount of cornstarch slurry.
