- 1 lb ground beef
- 6 medium russet potatoes, peeled and diced
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup unsalted butter
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/4 cup chopped green onions (for garnish)
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and set aside.
- In your crockpot, combine the diced potatoes, chopped onion, minced garlic, and browned beef.
- Pour in the beef broth, and stir in thyme, paprika, salt, and pepper.
- Cover and cook on low for 6-7 hours, or until the potatoes are tender.
- About 30 minutes before serving, stir in heavy cream, cheddar cheese, and butter.
- Cover and cook for an additional 30 minutes, allowing the cheese to melt and the soup to thicken.
- Just before serving, stir in sour cream for added creaminess.
- Ladle the soup into bowls and garnish with chopped green onions.
