- 1 lb Italian sausage, crumbled
- 1 package (20 oz) cheese tortellini
- 1 cup spinach, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 cup shredded Parmesan cheese
Instructions
- In a skillet, brown the sausage over medium heat. Drain and set aside.
- In your crockpot, combine the sausage, tortellini, diced tomatoes, spinach, chicken broth, garlic powder, and Italian seasoning. Stir to mix everything evenly.
- Cook on low for 4-5 hours or on high for 2-3 hours, until the tortellini is tender.
- About 30 minutes before serving, stir in the heavy cream and Parmesan cheese. Let it cook until the sauce thickens.
- Serve hot, garnished with extra Parmesan or fresh herbs.
Notes
For added flavor, consider adding red pepper flakes for a bit of heat.
