A savory meatloaf infused with rich French onion flavor, topped with melted Swiss cheese, and slow-cooked to perfection—ideal for a comforting dinner.


Ingredients

  • 1 lb ground beef
  • 1 packet French onion soup mix
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 cup milk
  • 1 large onion, thinly sliced
  • 1 tbsp olive oil
  • 8 slices Swiss cheese
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • In a large bowl, combine ground beef, French onion soup mix, breadcrumbs, eggs, milk, salt, and pepper. Mix until well combined.
  • Shape the mixture into a loaf and place it in the crockpot.
  • In a skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 10-12 minutes. Add the caramelized onions on top of the meatloaf in the crockpot.
  • Pour beef broth and Worcestershire sauce over the meatloaf. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  • In the last 15 minutes of cooking, place Swiss cheese slices over the meatloaf. Let them melt.
  • Garnish with fresh parsley and serve.

Notes

For extra flavor, consider adding minced garlic or fresh thyme to the meat mixture.
