- 1 lb ground beef
- 1 packet French onion soup mix
- 1 cup breadcrumbs
- 2 eggs
- 1 cup milk
- 1 large onion, thinly sliced
- 1 tbsp olive oil
- 8 slices Swiss cheese
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large bowl, combine ground beef, French onion soup mix, breadcrumbs, eggs, milk, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf and place it in the crockpot.
- In a skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 10-12 minutes. Add the caramelized onions on top of the meatloaf in the crockpot.
- Pour beef broth and Worcestershire sauce over the meatloaf. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- In the last 15 minutes of cooking, place Swiss cheese slices over the meatloaf. Let them melt.
- Garnish with fresh parsley and serve.
Notes
For extra flavor, consider adding minced garlic or fresh thyme to the meat mixture.
